Here is a strange question.

Been running CM7 and now CM9
Loving it, and I have two Cappy's.

I forsee getting a new phone in the next few months I think.

BUT, Iove the Cappy.  I was thinking of wiping it again as always and turning it into a media device.  No phone.

Anyone tried killing services or the like to have it strictly a Wi-Fi media device?  Like an iPod/iPod touch?

Turn on Airplane Mode, then turn on Wi-Fi only.  Works for me when I let the kids play with the Cappy.

I've recently picked up my Captivate again to serve as the household toy.

I learned that dialing *#*#4636#*#* accesses phone information where you can turn the radio off.  There's an impressive amount of power and information available through this method, eliminating the need to setup airplane mode ever again.

I don't know if this dialing combo is a Android-wide utility or proprietary to CM builds.

*EDIT*
Today I cycled my device off/on, and the radio was on again.  I'll keep looking for a more permanent solution.  I don't want folks to borrow my Captivate and even dream of dialing folks.

I have done what was suggested earlier.
I put the phone in Airplane mode, but turned wireless on.

Seems to work ok.

When you get a new phone AT&T will deactivate the SIM card, the phone will work with a deactivated SIM card with full functionality (except for phone calls).  It will still allow emergency 911 calls and it can serve as an excellent backup phone if you put the new phones SIM card in it.
