I've recently rebooted Cyanogenmod 7.1.0 onto my phone, along with gapps-gb-20110828-signed. I had to do this because my apps weren't working correctly, but that's another story.
My only issue is that the Market is not changing to the Play Store. Everything else works fine, but when I try to download an app, it says "________ could not be downloaded due to an error."
Any suggestions?

Try wiping the data for the market. If that doesn't work, you can try and flash temasek's unofficial gapp package http://mediafire.com/temasek. I believe this package is updated to the latest market/playstore.
