I only rooted my Wildfire S (GSM) two weeks ago and only installed CM 7.2 one week ago, so am pretty new to all this.

The version I have running at the moment is CyanogenMod-7.2.0-RC1-marvel-KANG and it works very well.

I am thinking of 'updating' it using the latest build but I'm not sure what I need to wipe, or whether I need to do anything other than simply flash this new file.

I'd be grateful for any advice on how to go about this. I have already done a nandroid backup.

Just flash the new file. There is no need to wipe anything :)

I am also moving this to the Wildfire forum, as the hacks and mods forum are for hacks/mods of CM itself.
