As for now, the Trebuchet Launcher's options are only available under the application menu, what can only be accessed via pressing the devices menu button. As for now, many tablet will get support, what are lacking this very button, thus, the actual meaning of having Trebuchet is gone - we can't access the settings. It would be great if someone (mostly asking nebkat here, as he seems to be the most active member working on Trebuchet) could make an option to get to the settings what is available without using the context application menu.
So far I came up with the following ideas:
a, Having an icon added next to the "Applications" button on the main screen, and next to the "Market button" on the applications list/widget view, what takes the user directly to the Trebuchet Settings menu (the easy way)
b, Adding an application shortcut to the apps list (the harder way)
c, Making a mod to the framework, so doubletapping/longtapping home/return/recentapps will generate the Menu key's effect (apparently the hardest way, but it might be needed in the future, when CMSettings come)
d, Making a mod to the framework/app, so the menu button is always displayed next to the three soft buttons onscreen while in Trebuchet (Paul O'Brian already did it for the Galaxy Nexus on MoDaCo).
As far as I know, this problem exists not just for the tablet users, but for Galaxy Nexus users too (except if they've used Paul's great mod to have menu button enabled), and thus, it would deserve a bit higher priority.
For me, I would go with a, for now. There will be a lot of customizations for Trebuchet in the future, and one might be an ADW Ex-like editable top bar (removing the Search bar is already possible).

Began working on option a, will publish my results soon. Although, as my PC isn't really up to ICS compiling, it'll take some time.

Okay, just saw that nebkat already worked out a solution for CM-based ROMs:

But this solution won't help those with non-CM ROMs (as Trebuchet is capable of being a standalone launcher, and only needs root, this is a major flaw in design). So I'll continue on the workaround.
