Remove system apps

Is there a way to remove system apps ? i.e. Rom manager (as root manager) can't be moved in SD because is system app, I don't use the basic calc of system, so I wan't to remove them.
I've tried to directly remove them while I'm in recovery mode (with adb shell) but some strange results had happend forcing to restore backup.

I used Root Explorer to move/rename the files.

su (here confirm)
mount -o rw,remount /system
rm RomManager.apk (or any other)

Do we have to remove the app from system files "packages.list" and "packages.xml" ?
