Depending what you want from a launcher, Go Launcher and Balancer are the best ones I've found.
Balancer has a simple, clean interface.
Go Launcher is practically fully customisable.

But everyone has different tastes. I can't stand Launcher Pro, but I know it is the favorite by quite a few different people.

It was everything I wanted and more. However, it had been months without any updates so I recently switched to ADW EX. It is pretty good, I definitely like it better than GO Launcher.
I just wish ADW would give me the option of scrolling dock instead of the secondary hidden dock.
I find that if you stick with something long enough you'll like it.

a week ago adw ex totally locked up on me! i couldnt do anything as it kept force closing
i had to wipe and re flash to sort it
so im now on Go launcher and using Simi folder - looking good

Its lightening fast, simple and looks fantastic. No support for scrollable widgets but you can put widgets into tiles.
My Galaxy S is much more responsive with this launcher
