Noticed that too, I like to use GO SMS though, once I realized what was going on I went in the settings and told GO SMS to separate msgs larger than 160 chars itself.
That's the best advice I can give.

I rooted my friend's phone and she is having the same issue. I set her texts to split, but she's already souring on the whole rooting thing. I run CM7 on my Incredible and don't have this issue.
