I've been using one of the nightly builds with no problem so far, but now I'm ready to go to the stable release. Do I need to do any formatting to update it, or can I just place it in the root of the SD card, reboot to recovery, and pick "Install from SD Card"?

it is suggested when you upgrade to stable you perform a full factory reset and wipe your cache partition. It isn't *necessary*, but if you run into issues, you should go back and wipe and start over before submitting any bugs.

If I do the factory wipe I'd have to reinstall gapps, yeah?

Factory wipe will remove all apps: gapps, market downloads and anything else you've loaded.
I upgraded from nightly-35 to stable release without wiping anything and have had no problems.  I'd take Kaik's advise though.  If you upgrade and see problems, wipe everything and start from scratch.
